Although I am not much of a baker, I love to make these post-run muffins once and a while.banana I have to say they are pretty darn great, considering!  They incorporate the carbs, protein AND good fats much needed after a good run. And what runner doesn’t LOVE bananas? Bake, and enjoy!



2 cups unbleached all purpose  flour

1 scoop Vega Proteins & Greens powder, chocolate flavour

1 teaspoon baking soda

1 teaspoon baking powder

154066192_XS1/2 teaspoon finely ground sea salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

splash of pure vanilla extract

3 very ripe bananas

1/3 cup agave or maple syrup,  or raw sugar if preferred


1 tablespoon ground flax seeds mixed with 3 tablespoons water (‘flax egg’)

1/3 cup unrefined coconut oil, melted

1/2 cup water


Method of Madness:

Preheat oven to 350 degrees F FullSizeRender(1)

In a bowl, thoroughly whisk together dry ingredients

Process bananas, oil, flax mixture & water, then fold into dry mixture. Let sit for ten minutes

Scoop into muffin mold. Mixture enough for a dozen regular, half-dozen large or two dozen mini-muffins

Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean

Cool completely before removing from mold

Pairs perfectly with a hot cup of medium-bold black coffee
