Photo (9)Make this delicious and guilt-free dessert into fudge popsicles or mousse! The world is your oyster (mushroom) – do what you see fit.

 

All you need to make this simple and satisfying plantastic treat are the following ingredients:

 

 

-half a small ripe avocado (bright green but soft enough to spoon out of skin easily) Photo (8)

– 1.5 cups of non-dairy milk (I used non-sweetened almond-coconut milk and it tasted divine!)

– 2 tablespoons organic cocoa powder

– 2-4 tablespoons agave nectar or pure maple syrup (you may substitute with sweetener of choice)

– 1 teaspoon pure vanilla extract

– pinch of salt (optional)

note: you can replace sweetener with a sweetened non-dairy milk instead. Again, sweetness preference is to-taste.

– popsicle trays (I prefer silicon, as it’s easy to pop contents out of. Otherwise, run under hot water to loosen if using traditional popsicle trays.)

– ramekins or small bowls for mousse

 

Procedure:

– blend ingredients until smooth Photo (10)

– pour into popsicle moulds and freeze OR spoon into serving dishes and chill

– serve frozen / cold

 

Yield: 8 mini fudge popsicle balls plus two 1/2 cup ramekins of mousse
