Ingredients: Photo1-4

2 ounces extra-firm tofu

1 tbsp red onion, chopped

1/2 tsp finely chopped fresh dill or 1 tsp of pickle

1/4 tsp turmeric

1 tbsp mustard

¼ tsp onion powder

black pepper to-taste

pinch of black  salt (has an ‘eggy’ taste)

1 tbsp vegan mayo


Press tofu to remove excess water. The drier the tofu, the more flavour it will absorb.

Crumble or cube tofu into a mixing bowl.

Add remaining ingredients, and mix well. Let mixture sit in fridge, covered for 20 minutes in order for the tofu to absorb the dressing.

Serve chilled on a bed of lettuce or on toast with veggies of choice.
