A filling and warming meal, perfect for fall! Serve aside a great big fruit & veggie salad, and your meal is balanced and complete! lentils

Ingredients:

– 1 cup cooked lentils
– 1 onion of choice, chopped
– 2 cloves garlic, minced
– 1/2 cup ketchup, divided
– 1/2 cup quick oats
– 1/4 cup chopped walnuts or almonds
– 1 tsp dried thyme
– 1 tbsp soy sauce
– salt & pepper to taste

Directions: lentil loaf
– preheat oven to 350 degrees & oil a loaf pan
– saute onions, garlic, lentils until browned
– add half of the ketchup and the rest of the ingredients to the mixture
– pack into loaf pan, spread the remainder of ketchup on top
– cover with foil and bake for 45 mins

Cool before slicing
