Spring has sprung, no better time to start experimenting with BBQ food options. This coleslaw recipe is light, refreshing and super tasty!

– 4 tbsp plain soy or almond milk

– 2 tbsp lemon juice

– pinch of mustard powder (or dollop of prepared mustard)

– salt & pepper to-taste

– 3 cups finely shredded purple cabbage

– 2 carrots, chopped fine

– 1/4 cucumber sliced

– 1/4 cup sunflower seeds

– 1 tsp dried dill

– 1/2 cup vegenaise (or vegan mayo of choice)

 

 

Directions:

– blend milk, vegenaise,  lemon juice, mustard, salt & pepper

– pour mixture over cabbage & carrots

– stir until mixture distributed evenly

– garnish with cucumber & sunflower seeds
