Ingredients:

– 1/3 cup organic quinoa

– 1/2 cup vegetable broth

– 2 cups baby spinach

– 1/2 cup sliced black olives

– 1/4 cup sliced grape tomatoes

– 2 tbsp of dressing of choice

– 2 tbsp of shredded non-dairy cheese

 

Instructions:

– bring quinoa and broth to a boil, reduce heat and simmer for 15 minutes

– set aside to cool

– assemble salad

– add quinoa (hot or cold) on top of spinach & garnish with olives, tomatoes, dressing & cheese
