This bake is super simple to make & can be altered to one’s specific taste.  A healthier alternative to Mac & Cheese that the kids will love! 7000dry_elbow_pasta

Ingredients:

– 1 cup cooked elbow macaroni

– 1 pepper of choice, chopped

– 2 stalks of green onion, chopped

– 2 cups unsweetened milk alternative

– 2 tbsp cornstarch

– 1 tbsp vegan margarine (becel makes one)

– 1/4 tsp garlic salt

– 1/4 tsp dry mustard powder

– 1 tbsp nutritional yeast

– 1 cup shredded ‘cheese’. I use Daiya.

– 1/4 cup quick oats or bread crumbs

– black pepper to taste (I like lots ‘n lots on everything!)

– oil of choice for frying

– 2 quart baking dish

Sauce:
– Heat milk, cornstarch, garlic salt, green onion, margarine & pepper in a small sauce pan, stirring constantly until consistency is thick.

– Cover and remove from heat.

Veggies:
–  Fry veggies in oil

– Once soft, remove from heat and add to greased 2 quart baking dish along with macaroni, sauce and oats. Mix well.

– Add grated cheese and more pepper if desired

– Cover with tin foil and bake for 30 minutes at 300 degrees.

– Let stand for 10 minutes without foil before serving. It’s HOT.
