. Choose a pepper that stands up straight, without falling over
. Chop off the top, gut-it, and then stuff it as you wish.
. Instead of veggie ground, I made mushroom ground. I marinated mushrooms in balsamic vinegar, olive oil and garlic, and then fried with cubed tofu and spinach.
. Sprinkle with freshly cracked black pepper. SO TASTY.
After stuffing, it’s traditional bake for 30 minutes at 350. But do yourself a favour and don’t!
