A lot of people make stuffed peppers, it’s a popular dish among many cultures. But I ask you this: have you ever left the pepper RAW? C-R-U-N-C-H!

Incorporating raw foods into your diet is a great way to ensure you’re getting plenty of vitamins and minerals. Unfortunately, the cooking process sometimes depletes foods of their nutrients.

Directions:

.    Choose a pepper that stands up straight, without falling over

.    Chop off the top, gut-it, and then stuff it as you wish.

.      Instead of veggie ground, I made mushroom ground. I marinated mushrooms in  balsamic vinegar, olive oil and garlic, and then fried with cubed tofu and spinach.Photo1-1

.      Sprinkle with freshly cracked black pepper. SO TASTY.

After stuffing, it’s traditional bake for 30 minutes at 350. But do yourself a favour and don’t!
